I have always heard wild hog was better tasting that farmed pork.

Nope! none whatsoever.
Taste is subjective, but generally speaking...
Domesticated pork has been genetically engineered for taste. Wild, or feral pork is lean, dark and no where near as tender, sort of like beef but it depends on the hog.
A small hog eats better than a big one, less the bar hogs. Sow can be better that the boars but it depends on the condition.

In the hog business, fat is flavor. So how fat or lean a pig is will affect the taste, as well as what they eat. Most 'wild' hogs around here are not that many generations removed from the farm, and are still eating from food plots and deer feeders, not to mention peanut farms, etc. etc... If killed during blackberry or blueberry season, the meat can taste sweeter. Acorns can give the meat a nutty taste, but some acorns are bitter. You know the males have not been cut, so any boars with much size can taste and smell too musky. There was a garden industry here where folks catch young hogs in catch pens, then fatten them up for a couple of months before slaughter. But an outbreak of disease has caused laws to be passed against the transport of live wild hogs.

So to answer your question, it all depends. On the age and sex of the hog, and what and how much it has been eating. But to me, free always taste good. Not to mention they can cause thousands of dollars damage in just a few days if not killed.

Another reason for a speedy kill. Your deer will not want to eat after them.

We have a small local grocery that sells locally raised pork. Not the super lean pork the supermarkets sells these days. This pork has a lot of fat in it. As Larro says fat is flavor. I almost forgot what a good pork chop tasted like until I found this store.

The big ones aren't worth butchering. Small to medium good eating. Back straps are great, last ones tasted better than store bought pork loins IMO. Took a couple in to be processed had good fat on em, guy said "man, these look great, whatcha been doin corn feeding em?".... Unfortunately I have...

You're gonna just keep seeing more and more hogs unless you irriticate. Might start thinking about a trap to get the whole sound.
Mature Hogs can have 2 litters per yr with up to 12-14 piglets..

Some may not like it but a good way to get started eradicating is taking shooting clays, fill with mayonnaise and leave in areas where they are at. They'll eat them and hemorrhage out when the shards start cutting their intestinal system. You have to keep them out as long as you are seeing signs of them.

It even gets better when you have a milk cow that gives about 7 gallon / day and all excess goes to the hogs.:licking:
