Crab Quenelles
Got a pound of crab meat
Leeks
onion
green onion
Carrots
Celery
Salt & pepper
Tomato paste and Harissa sauce
Made some pâte à choux pastry dough
Sauted the veggies mixed in the harissa and tomato put that in a blender with some home made chix-stock and some of the crab in a smallish casserole dish
Put the crab and two eggs in the pâte à choux pastry dough mixed well then using spoons I formed the stuff into little football shapes and poached them in stock with garlic and thyme
when they float let ‘em poach for 5 more minutes and then into the thick bisque sprinkles Gruyere cheese on top and into a 375 oven for 15 minutes.
