With restaurants largely shut we have learned to make some of our favorite meals at home. Mostly Mexican, Thai, and Japanese.
This is an easy recipe that always turns out great.
Ingredients:
1.5 lb chicken breasts
1 poblano chile
1 jalapeno chile
8 tomatillos
5 garlic cloves
1/2 sweet onion
1 handful fresh cilantro
1 tablespoon mexican oregano
1 teaspoon cumin
salt, pepper
What to do:
1. Grill seasoned chicken breasts on the outside grill, then shred with two forks.
2. Put everything else in the food processor and make a smooth green sauce.
3. Put sauce and chicken in a large frying pan and simmer for 20-30 minutes.
Can be put into bowls or tacos or burritos or enchiladas. We like it with just corn chips and sour cream.
