I planted a bunch of cayenne pepper plants that I got for free, problem is I don't know a thing about them.

They have nice looking peppers on them with a curl towards the end. When do I pick these? I would like to use some in salsa maybe, before they get to hot, and maybe can some. Or should they be dried?

Any pointers would be great.

Growing, drying and using homemade cayenne pepper

If that is the case mine should be very mild. We have had so much rain it's crazy. The plants haven't done very well and the best I can figure it is because it is so wet. I am surprised at the amount of peppers they are putting out considering how small the plants are.

Growing up my dad always planted turnips and radish in the late summer/fall..

one year he thought there was not enough fertilizer in the small garden, so he had a pickup truck sized dump truck deliver a load of chicken manure-- or whatever you call it..

That stuff was delivered about early/mid summer. and when he planted the turnips etc-- they grew like crazy...

and now for the interesting part---

the turnips were so hot they would burn your tongue..

coinkinydink???? or science???

I dunno, but I only ate one of them things that year..

the next year they were milder... and the following year he spread 3 or 4 bags of fertilizer on the field (plot was about 30 x 30).. (Forgive me I don't remember what kind- I was 8 or 9...)

It was a bit spicier than the non-chicken year.. but not as bad as the chicken year....

I dunno!!

go figure!

Well, chili peppers[those big green ones] love them stuffed[sauage hambuger, onions garlic and cheese, roll in flour and brown in skillit with bacon grease],oh yeah thats good, but I like my chili peppers on hot side, some years they taste like green bell peppers, but some years they are right on,think its about the mosture content, think hot peppers do better when it is dry, anybody want to educate me about this?:)

I usually dry my hot peppers in a food dehydrator until they are crispy dry. Then I put them in a food processor and grind them up into coarse powder. Try not to breath the fumes and dust or you will choke! Might be a good idea to do it outside. I store them in a quart jar with plastic screw on lid. Add it to chili, burgers, etc... keeps forever.

In some climates it's possible to just string and hang the hot peppers for drying.:D

When strung and hanging some green hot peppers will turn red as they dry.:)

Pays to wash your hands after handling hot peppers!

Growin' cayenne peppers is like nuclear proliferation. You only need one of them to blow the top of your head off, so why have a plant with hundreds of peppers on it? I signed a Capsaicin Limitation Treaty and tilled my loaded plants under.;):laughing:

I have a friend who tells the story of a cold night in Georgia and he as a newly wed was sitting in front of a fire in their fireplace with his new Mrs . They ordered a Pizza , it was a night to stay in and was romantic, along with the pizza came a few hot, very hot peppers , which my friend loved. He ate the hot peppers along with the pizza and when the pizza was done with the fireplace all aglow..things got romantic if you get his drift.....Well, things got real hot in the netheregions real quick and there was a scramble to bathrooms by both he and his new wife and it put cold eater on an otherwise romantic night.

Now I have told this story as delicately as I could...be careful with hot peppers boys !

When I was dating a girl in high school her grandparents were growing hot peppers. I popped one off the plant and chewed it up right there to show her how tough I was. Her family was quite impressed until I wiped the one tear from my eye with the same hand I picked the pepper with....

They had a great laugh at my expense!

Last year when I made my annual batch of "death powder" I used the wife's little food processor. That thing is very efficient at turning dried peppers into chili powder. So efficient that when I took the cover off the food processor it pretty much acted like pepper spray in the kitchen. Man, that was FUN!!! :cool2: :confused2: :licking:

:laughing:Thanks for the pointers guys, I will remember not to get romantic, pick my nose or rub my eyes after handling hot peppers.

I picked the peppers this afternoon and got about 45 off 12 plants. I cut them up and froze them and they are now waiting to join some tomatoes in a batch of salsa.

I've always waited for them to turn red before picking but they look good green....my preference is for less hot hot peppers like poblanos, which I always pick when green.

Chili peppers sometimes don't turn red or are slow to turn red, they should be ready before turning red,but if they are sweet, because of alotta rain, they won't turn hot even when they do turn red, some years they are sweet[taste like bell peppers] and some years mine taste like they are supposed to.

We burn and scrape skin off, than cut tops off, than core and seed,[leave whole],than freeze, than get them out, thaw, stuffed with cooked 50/50 mix sausage, hamburger, cheese, onions, garlic, dip in milk, egg mix,,than roll in flour, and fry in bacon grease, very tasty.

I have habanero and poblano (others in the past). I wait for the poblanos to turn red, and I can dice 'em up and eat them raw, in addition to adding to almost any food.

You don't want to do that dicing thing with the habaneros... they are one of my favorite flavors but they are freakin' deadly. I freeze some every year and have most of them left.

Have the best luck with sandy soil, no fertilizer or manure, and neglect. They do need water but you want it to drain through pretty quick. Miracle Gro just makes the leaves grow, not much point in that.

Had several attacks by tomato/tobacco hornworm. They will defoliate a plant pretty quickly, but once you start looking they aren't too hard to find (ants love them, in turn). The foliage will return if you catch them in time. I think I also had some stem borers destroy a plant or two, the way they died back.

Duffster, where are you in the state? I got mine in late and have some, but yours look fantastic!

Another tip is to wear rubber gloves when processing hot peppers, if you do a lot your hands will burn for a day or so w/o them. Freezing is a great way to store them, freeze them on a cookie sheet and then store them in zip-lock bags or cottage cheese containers.
