CAT 3304 Engine dipstick states: "DO NOT OVERFILL". Why? What could happen?

It could conceivably cause abnormal oil consumption,
but mainly, I think, it can cause oil seals to fail.

To much oil is bad -just the same as to little the machine can really whip that oil up resulting in foaming which can result in lost cooling, more pressure, drain holes that do not drain back and other problems. When you check the oil you will not be able to tell if is overfull of fuel ,water,or oil.

Dad once forgot to drain the old oil from our HS principal's car. He put new oil in it and obviously did not check the dipstick. The principal took the car and soon returned it with the engine's hydraulic valves hammering away. The crankshaft obviously beat the high oil level into a foam. The foam went to the hydraulic lifters and caused them to hammer.

I'd get a similar hammer on my VW Cabrio's hydraulic lifters if I didn't use 5wxx or 0wxx oil. Any heavier oil (at startup) would not get to the lifters quickly enough.

Crankshaft and rods are not supposed to be submersed in oil. Ever figure the pumping losses?
That is why racers run a deep sump oil pan or a dry sump oiling system. Power is lost and waste heat generated when moving parts slam into oil.
