I noticed the long shank of the u-bolts(?) sticking down. I would suggest using castellated nuts, the kind for cotter keys, the reason is that if the threads get buggered up the posts of the nut will, many times, clean up the threads well enough to get the nut off. If they're still too messed up to get the nuts back on, you can get a good start for a die to re-cut the damaged section.
