My dealer quoted me $700 for parts and labor for rear remotes. Two hoses and two connectors can not be that expensive. Does anyone know what is included in the kit and is the price normal?

You are actually getting a valve, mounting hardware, connectors and 3 hoses.
List price on the Kubota kit from Tractorsmart.com for a 2 remote system is $870. Kit includes B7333, B7343, and B7393. Installation labor is extra. A single remote system would be $600 and is only the B7333.
You are getting a good deal from the dealer if he is using Kubota parts.

Your response has made me rethink my need for the rear remote. I am in the process of building a small backhoe attachment and want to connect the hoses on the rear of the tractor. Any thoughts?

Yes...if you are wanting to power the backhoe you don't need the remotes, just a way to tie into the hydraulic system. On my B2910 Kubota, this is possible using a special block that costs about $60 more or less.
For a backhoe you would need to have the controls in front of you anyway, so the Kubota remotes would do nothing for you in that case.
I don't kow if the b7500 has a rear outlet block for hydraulics or not...but if not you could use the Power-beyond port of the loader control valve...

No rear aux hydraulic outlet block on any of the 7000 series Kubotas.
Remember that backhoes typically do not have a power beyond so the hydraulic circuit is diverted to the BH and the 3pt is disabled. Now if you have a pto driven backhoe then this does not apply.
I have considered a pto pump w/tank for $500. The company I purchased the kit from suggested using the tractor hydraulics to save money. It may be less expensive to go with a pto pump.

If money is your main concern then go with the pto pump and tank.
However, having rear remotes can be a big advantage since you can now have a hydraulic top link and/or tilt link. You will also be able to use a hydraulic chute rotator for a snowblower or any other implement that has hydraulics.
Rear remotes with a pto pump driven backhoe is the ideal situation.
The drawback to using rear remotes for the backhoe is that you will have to tie the actuating lever on one of the spools so that it remains open all the time with flow going in the correct direction. This generates a lot of heat which could lead to other problems.
Tractors that have backhoes that are run from the tractor's hydraulics are typically plumbed so that the 3pt is disabled whenever the backhoe is connected. This is done for safety reasons.
