Attention pumpkin growers...advice requested...

I've got an extra couple of acres that I am thinking of turning into a pumpkin patch. What are some of the better varieties for carving pumpkins? I am planning on selling a few, giving some away, etc. and want to know which pumpkins you have the best luck with.

Also, if I plant more than one type, what kind of separation do I need to prevent cross-pollination?
