Are these type blades (rotary cutter) ok for "typical" field cutting (long grass)?

Until recently, I've never seen rotary cutters with chopper blades & dual blades.

We have NO stalks... just some old pasture land that we now cut. Would this be a good/bad/indifferent style of setup?

I've seen another (also happened to be a Schulte) that had dual blades but no chopper fixed blade.... how appropriate is that style for cutting pastures (that are GENERALLY maintained/cut a couple times a year.... place has been let go for couple years so it's rough in spots)

I have no direct experience with that cutter, but it should handle your pastures easily.

That blade arrangement is considered as an ultra mulching setup by Schulte. Should do a great job on pasture grass.
