Advice needed on planting field.....

I am building a new home on 5 acres of land. I have removed about 2 acres of trees where the home is. Here is the question: what should I plant in about a 2 acre field in front and side of the home that I can just brush hog 2-3 times a year? I will have a nice lawn closer to home but I do not want to finish mow 5 acres. I'm thinking of waiting until its going to rain for a while and planting some kind of field grass???? I really don't want to straw the whole thing or water the whole thing. Any advice appreciated. Here are some photos

A short clover would be nice and you would only have to mow it once or twice a year.
