It depends on the time of year. Given a choice, your best time to cut it is in winter while they're dormant. In spring/summer, they can start staining in a couple of weeks. Up here the rule of thumb is to cut pine and hardwoods in months which have a "R" in the name, although the last few years even September can be a bit too warm and lead to staining.
Keeping it out of the sun can help. Or you could always just bring them down to South Carolina and store them in somebody's pool.
