Growing up, my dad would occasionally bring home special treats from the local butcher's shop. Blood pudding (aka black pudding) and head cheese were always special for my brother and me. They are both pretty gross but for some reason they still taste good to me. The same shop still makes them too. Pickled heart, tongue, and pig hocks were like candy for us.

The whole melon family.
While some are tasty to me I belch them for hours.

On the other hand I can eat cheeses all day.

Then I don't like any liver ever since I once was fed putrid moose liver after celebrating a hunt.

We lived in a Polish community in SW Missouri; wonderful people, and great friends...but they had a very unusual...unusual to me...dish called Czarnina... or duck blood soup. Never got a hankering for it, and I guess it's just as well, to my knowledge we were never invited to dinner when it was on the menu.

Tried duck once at this super fancy Italian restaraunt my wife and decided to go to for our anniversary.

I'm not sure how they got greasy and driy to go together, but they nailed it to a T.

I pass on the duck from here on out.

My wife is 1/2 Polish and 1/2 Hungarian. Both sides of her family talk about it often, yet, after 40 years, no one has made it, so I haven't had the opportunity to try it. Sounds really good, though.

You guys talking about wild game has reminded me of a few things.

Around here in South Louisiana, one of the big delicacies at hunting camps is squirrel brains. I've had it a few times, but it's not very tasty. It's just kind of weird to stir the pot of squirrel stew and see the little squirrel heads in the pot.

Another meat I had was black bear. I made a hunt in Canada in 1996 and took a 400 lb black bear sow. We tried cooking it several ways and just could not make it taste good. One night at the duck camp we cooked some in a stew. It was nasty so we threw it out and the dog tried eating it. Later we saw the dog licking his rectum to get the taste of the black bear off his tongue.

Cooking bear meat is definitely a fine art. A buddy of mine got a 300lb black bear. He had it butchered, and the hide turned into a rug.

The only person allowed to cook up the meat though was his brother in law who happened to be a chef.

My buddy had tried grilling some of the meat one night with horrible results.

I tried with similar results. Even though we both are pretty good cooks.

His brother in law cooked some up up for us at deer camp. Fried it in a cast iron skillet. Came out great He did drain the access grease off on occasion while he cooked it. And a bunch of seasoning.

After that he was the only one allowed to cook it. He did up a roast that came out really well on another occasion.

There was a Chinese buffet not far from home we used to eat at, until one summer day a few years ago we were seated near an open back door.
Anyone who has cats knows what I saw was true: the white door frame was black up about 5" up a few inches. Cats rub their head leaving a grease spot.
At home I called animal control, asking if they had reports of missing cats from the sub division behind restaurant? "Yes...why do you ask?" I said curious and hung up.
I then called health department...lady said they would check it out and call me back. A week later no call...so I called her...she nervously said "oh...everything was ok, I gotta go". We rode by restaurant which was closed for business!
A friend works for health department in a nearby town. He said on an inspection of another Chinese restaurant he found 13 house cats in a freezer!
So...we haven't eaten Chinese since!
