One trick that works slightly faster for me, after boiling and dunking in cold water, is to crack them all the way around and then roll them in the table with a little down pressure. It completely fragments the shell like the Ball jar trick.
Every morning my wife peels a couple hard boiled eggs, one for her and one for me. This morning, I heard her grumbling at an egg that wouldn't peel and offered to do it myself. She hands me this pathetic egg, all broken up and a million pieces of shell stuck to it and says "Here ya go!" and walked out of the kitchen. After 45 seconds of picking at it, I just ate around the remaining eggshell and threw the rest away. It was hopeless! :laughing:
I steam my eggs. My wife boils hers. We go through about 18 a week. We both put them in ice bath when done cooking. I can't tell the difference between steamed or boiled or peeling ease with either. They're both cooked equally.
cheap steamer basket in pot. fill water to just below bottom of basket. boil water. put eggs in. put lid on. 20 minutes for hard boiled/steamed. even same day fresh eggs peel easily.
When I was getting 12 eggs a day I decided to make picked eggs and sell them. Each jar held 22 eggs so I learned the best way to peel them was to avoid eggs that were laid 2-3 days or earlier. Nothing you can do to peel those As for the rest I would boil them and place them on a paper towel, then gently roll them in between my palm and the paper towel until you feel slight crunch all the way around the egg. It peels like cutting butter with a hot knife after that. Its also quicker....and its the only method where i can keep 99% of the eggs whole. You dont want broken hard boiled eggs pickled.
