Red Beans and Rice Pressure Cooker Recipe - Instant Pot

I'm using my favorite pork and beef sausage, so I'm not following exactly. Many recommend smoked ham hocks IIRC.

Oh, and I omitted the bell pepper. Can't do bell peppers unless I want to pay the fiddler later.

I'm on it, though I'll have to dig through the freezer to see what kind of meat is in there.

Both bell peppers and celery are off my diet, but that's not a big deal.

Thanks!

OK, here's a question for our resident heart-healthy chef:

That red beans'n'rice recipe called for sauteing the onion in 2 tablespoons of oil.

How do you saute without using oil?

very slowly with some water, but it takes more water, because it steams off. Basically, you are steaming the onions tender.

Wouldn't putting the onions in with the meat/spices and pressure cooking 'em have the same effect?

When I saute, I get a browning/caramelizing flavor. Not sure steaming would do that, or if the flavor is pronounced enough to be noticed.

Did you pressure cook for the entire hour, Kyle? I plan to start out at 30 minutes, and go longer if the meat isn't fully tenderized/shredable.

Oh, and I forgot to put in some liquid smoke, but I did add extra cayenne!

Get the Instant Pot hot on the Sauté button. Add the chopped onions and stir, (I use a wooden spatula) just when they start to turn brown and brown stays on the bottom of the pot add a little water and the brow will come off and by the time the water evaporates off the onions are translucent and sautéed.

I started with completely dry beans. Cooked for 50 minutes, let it sit for 10 minutes while off. They needed more cooking. Put on high for another 30 minutes, then let it set for another 20 minutes while off. They are done now, but not too mushy.

Good deal, thanks Don.

Our 8 quart, when set on high saute, burned my onions in a blink (with olive oil). Wifey says high is too high unless you're right on top of it.....She said she saute's on Low or medium. I had no idea these things could "pour the coals to it" with the heater they have.

Oh man are they good. I made my rice on the sticky side (I like it that way). I used cayenne too. Maybe only 1 teaspoon, plus the black pepper.

Who's rooting for who on these playoff games? Or is that a dangerous question....
