One thing I failed to mention is that, your roast needs to be taken out of refrigerator at least 4 hours prior to cooking to allow meat to get to near room temperature. This step is every bit as important as not opening oven door after oven is shut off.

110. It's the first time for that type of test that we know of. Probably next week. Getting another opinion from Mayo Clinic was what wife's doctor wanted. He got the referral for us.

What lab value was the 110, the T-3, T-4, or TSH?

Ron, that is great news on your wife! Three years ago they were testing me for several scary things, it turned out to be hyponeutremia, chronic low sodium. It was a severe imbalance of electrolytes and was causing tremors, muscle weakness and extreme fatigue. It took about 5-6 months to get back to normal, but it was a lot better than MS, ALS and all the other things they were thinking.
