Right you are, wrong terminology. Here is something similar to what we use:

I can't imagine straining all those tomatoes through that. We have a couple of those strainer baskets, but we use them to filter out the seeds and skins from our wine-making. So it is still getting used, just in a different department!

I looked at wine kits but wanted to use grapes. Do you use kits?

Maybe I'll try a kit. Something red and dry. Chianti is my favorite. The Italian grown Sangiovese grape contains nectar of the gods. :D

We actually bought the grapes at the local Farmers Market and made 15 gallons of Sangiovese and Cabernet blend last year. Still needs a little time in the bottle, but very drinkable. I am sure that you can find the Sangiovese varietal in a kit.

We freeze the tomatoes to make skinning them easier. We pull them out of the freezer and let them sit for a bit and then skin them. Then we throw them in a large kettle and boil them down to get some of the water out of them. Then they go hot into a jar and we put the lid on them.

We did that too, canned 30 jars of whole tomatoes. We dip them in boiling water for a couple of minutes, then into a sink of cool water, then they easily peel, slit them open and remove the seeds and then into the jar, covered and finally a 40 minute boiling water bath. They make a great "fresh tomato marinara sauce".

I am sure there are many ways to do this, but I always follow my mothers instructions precisely, and it turns out just like I remember it as a kid.

OTTO I throughly enjoyed your post and espically the pictures.
Thank You... We have never "canned" but we are in talks about it
and we WILL learn. I would LOVE to send you my wife for a week to learn,
WAIT! On second thought, as frisky as you look and w/ all that wine
about maybe we will just subscribe to your post! :D

Do you process them in a water bath or a pressure canner?

We use a water bath, set jars in, bring to a boil and set timer for 40 minutes.

That is what I meant to ask. I forgot you could us a bath for tomatoes and fruits.
