I changed the Hrydrolic fluid (SUDT) last night. I filled it to the top of the level indicator. When I ran the tractor for a few minutes at medium and rechecked the level, it was way past the top of the level indicator. Not sure why it would show allot more fluid in there when the tractor is warm compared to cold. Should I drain some of the SUDT to bring it to the appropriate levels when the tractor is warm since that's what it will be opertaing at or does it not really matter?

oil expands when it gets warm. This is normal.

True, but he said he only ran it for a few minutes. If he didn't really work the hydro fluid, then it wouldn't have gotten warm enough to cause what he described.

Let it settle before you check it again. Since you just filled it, then the dipstick may be playing tricks on you... sometimes oil will cling to the sides making you think the level is higher than it really is.
