Thought I would share my favorite breakfast recipe that almost no one has ever heard of, eggs and dates. Simple, fast and full of energy.

1: Cut 3 medjool dates in half and remove the pits.

Medjool Dates - Natural Delights I like this brand but any medool dates will do, just don't use the ones that look like this Honey Dates - Dried Fruit - By the Pound - Nuts.com

2: Start with one tablespoon of butter on medium heat and place the dates open side facing the downward. Let them cook for a few minutes till you hear them sizzle then turn them around.

3) Add a little more butter and crack your 3 large eggs on top of the dates. Try not to still too much as you are not aiming for scrambled eggs with this recipe.

4) Add a little salt and enjoy with your favorite type of bread, personally I like ciabatta baguettes.

Hearty and Healthy (In My Opnion)

Thanks for this recommendation. I will have to try it.

For the past 10 years or so, I get up every morning and fix a good breakfast for my wife and I. It's always 2 eggs, 2 slices of turkey bacon and some kind of fruit. Sometimes, if I have time, I'll saute' some fresh mushrooms too.

Our fruit varies most days. Lots of strawberries, blueberries, grapes, oranges, bananas, apples, or whatever is available. Sometimes I will add yogurt on top of the fruit and maybe some granola too.

Since I've been doing this, my day goes by much better. I can easily make it til lunch time without being miserably hungry.

Before, I would have a bowl of cereal or some pop tarts for breakfast and by 9 or 10 am, I'd be miserable and looking for an unhealthy snack.

Here's my favorite breakfast...had it this morning as a matter of fact.




“Breakfest Burritos” (ala Sharn Jean)

Ingredients (approximate)

4 eggs, blended (either ahead of time or after being added to frying pan)

6 to 8 small or medium flour tortillas

1/4 # pork sausage, crumbled

1/4 chopped onion

2 roasted and peeled Hatch peppers, chopped (SEEDS REMOVED) (Note)

4 slices American Cheese

Salt, pepper

Some of that New Jersey Picante sauce (I prefer the green sauce)

Salt and pepper to taste

In a medium size frying pan, fry the sausage nearly done, and drain the grease. Add the onion, stir on

medium heat for a minute or two, or until onions begin to clarify. Add the peppers, stir, and add the

eggs. Continue to stir until the eggs are done; and remove from heat.

Spoon the ingredients into the tortillas, and top with cheese and/or Picante sauce as desired.

Enjoy.

Leftover ingredients can be made into burritos and the burritos frozen for another time. They are

excellent reheated; about 2 or 3 minutes in the microwave will do it.

Note: Hatch peppers, if available fresh, may be roasted and peeled ahead of time. I like to put them on

the charcoal grill on a medium heat, until the skin begins to bubble up, turn, for a few seconds, remove

and freeze. The skins may be removed before or after freezing, as desired. If not available, canned

and diced chili peppers may be used, or any other pepper that you prefer.
