If the track comes off the rolls, it is probably loose or worn or a little of both.
The nice thing about a track hoe is that, unlike a dozer, it can lift itself up on the side where the track is off.
Look at the track mechanism - there will be some springs pushing on the moveable sprocket, usually with threaded adjusters. Back them off until you can get the track back on and re-load them.
Older track machines are famous for walking off their tracks - especially in the woods. Getting it back on is not fun, but not impossible. Good luck.
