Our whole family has worked on this recipe for some time. There are many peanut sauce recipes online, we tried quite a few, but did not like them. This one finally tastes as good as what we get in our favorite Thai restaurant.
Ingredients for Sauce:
1/2 cup peanut butter, we use crunchy
2 teaspoons soy sauce
2 teaspoons grated ginger
1 garlic clove minced
6 or more tablespoons unsweetened coconut milk
4 or more tablespoons lime juice
2 teaspoons brown sugar
1/2 teaspoon tabasco, or other hot sauce
1/4 teaspoon salt
1 cup water, or more
What to do:
Simmer everything in a large pan for a few minutes with more water as needed for good consistency
To add pork:
Cut up 1 1/2 lbs sirloin in 3/4” chunks
Mince 1/2 onion
Sautee in olive oil until pork is cooked through
To add snap peas:
Blanch 1 1/2 cups sugar snap peas for 1 minute in salted water
To finish:
Put sauce, pork and snap peas together, simmer for severql minutes
Serve over noodles or rice
