We been looking for a good holiday sugar cookie recipe. Anyone have any suggestions?

I'm not fond of the typical sugar cookie. Too crisp for me I guess and not much flavor.

I found a basic cookie dough recipe a few years back that I can modify to add all sorts of stuff as the mood fits me. Oatmeal, raisins, dried cranberries, apples or cherries and various spices all work well. Of course I can't find it right now to post.

One trick I discovered from a few searches when I wanted cookies and didn't have any eggs on hand ..... applesauce or bananas can also be used in place of eggs as the binder. They do the same thing 'chemically' when mixed into the flour to make the batter. Oh, I also mixed cornmeal and flour together to make something a little different that adds a bit of grit and a different taste.

These aren't exactly sugar cookies, but I like them...they're called "Thumbprint" cookies. There are many recipes on the internet. Here's one:

Here's another favorite; this one is for Cashew Brittle, but the recipe is the same for peanut brittle. Its made in an electric skillet, and it makes the best and easiest peanut brittle you have ever eaten. Guaranteed!

Cashew Brittle



Ingredients



1/2 cup white Karo Syrup

1 Cup Sugar

1 and 1/2 cups of Cashews (preferably salted, if not you may want to add a dash of salt)

1 teaspoon vanilla

1 teaspoon butter

1 teaspoon baking soda



Combine syrup, sugar, salt and butter; pour into electric skillet and cook (at about 350 degrees) until it just begins to turn color. Add Cashews and continue until the mixture turns a light caramel color.



Turn off the heat; stir in the baking soda and vanilla until the mixture is light and foamy. Pour onto a greased or buttered cookie sheet and spread with spatula. Chill or let cool and then break into pieces.

Sweet (pun intended) - We will give both a try. Thanks for the info.
We are always looking for something different and the wife like to bake stuff so all the info above is great. Never did the apple sauce/bananas idea so we need to try that.
We always have kids stopping by to visit with our kids so we have an audience of people that love to try new cookies!

Do a search for 'egg substitutes' or some thing like that. You should find some recipe type sites discussing the equivalencies. As I recall it was one banana or one cup of applesauce for two eggs. You can also cut down on added sugar that way due to the natural sugar in the fruit.
