Have a 5740 and was wondering if it is normal for the steering wheel to change its position as I use the tractor. Is this normal or could there be an internal oil leak that needs fixed?

You have hydrostatic steering. The wheel position changing in relation to the direction the tires are "pointed" is normal, as long as it is gradual and not all at once.

My dad's old JD 55 combine would rotate the steering wheel about every 2 minutes. Never a leak anywhere.

Normal, typical, no worries.
I bought 3 steering wheel spinners...this way, as they wander around the clock there is always one under my hand...love my spinners!!!!
I had same question some years ago, got same answer.

It is more noticeable when I am driving on the side of a hill, seem to constantly have to turn steering wheel up hill, not the alot but enough to notice the wheel changing position.

That sounds par for the course.

Reminds me of when the 4010 tractors came out back in the 60's. The power steering worked like a dream in the field but it had a very high pucker factor when trying to keep it going straight down the road.

Similar to texasjohn, I have 2 wheel spinners (I now need 3!) to ensure I have one of them in a comfortable position at all times. My steering wheel changes its position a lot while doing loader work.

I can't say that I noticed anything on my L5740 (good or bad) with respect to your concerns .

You boys must have short arms or set the the seat too far back. :)
