Should I be concerned about snow backing under the ridge cap on a 7/12 pitch roof? I know they sell those foam sealants but I never used it and am wondering if having nothing under the ridge cap will cause potential problems..?

I assume you're talking about a metal roof, in which case yes I'd definitely seal the openings. There's been several threads where people have had much better and way cheaper solutions. If you don't seal it you'll get windblown rain and snow up there, also insects, birds and small critters. The best solution I've seen was a piece of angle positioned at the top of the roofing so it blocked the channels. The leg of the angle was the same height as the corrugations on the roofing. You can also do the expanding foam thing, but that can turn into a mess.
I just don't see how snow is able to backup inside there on a 7/12 pitch?? I also installed a wire mesh inside to prevent any critters from getting inside the shop. Are there a any simple push-in foam blocks since I've already done put the ridge cap on?

Snow will blow in if the wind is right, doesn't matter what the pitch is. What's inside the building? If it's just tractors and horses it's not such a big deal.
