I don't think you can go wrong with pork belly anything. I made this for a family get together a few weeks ago. One of the very small Mexican eateries we go to had pork belly tacos, delicious. So I decided to make it up myself using parts of several recipes from the internet.
To make the pork belly:
1 1/2 lb pork belly with skin, cut into 1 1/2 cubes
Put in bowl with:
1 cup pure apple juice
1/2 tbsp garlic powder
1 tsp Mexican cinnamon
1 tsp cumin
2 Mexican bay leaves
1 tbsp Mexican oregano
1/2 tbsp sea salt
1 cup chicken broth
Cover and marinade overnight.
Put it all in a dutch oven. Cook at 350 for one hour covered. Cook for additional hour uncovered.
That is it, done. The cubes can be pulled apart with a fork or used as is.
Green Sauce:
In a pan of boiling water, put about 8 oz tomatillos and two serrano chiles no stems or seeds. Boil for 10 minutes.
Put the tomatillos and chiles in a blender with 1/2 small onion, 1 garlic clove, and about 1 cup cilantro leaves. Blend until smooth.
Done!
Put on tortillas with maybe some Mexican sour cream or chopped onion etc.
