I asked my selling dealer about brake steering too and he actually recommended setting cruise control and then I could lift my right foot off the HST pedal and work the independent brakes. I find I only use the brake pedals to set the pbrake, no need for brake steering yet.

I rarely use the steer brakes but, when you need them, they're handy. Clearing snow with the FEL can make the front end plow but, tapping the appropriate brake usually straightens it out. It may be difficult to engineer putting them on the left if your brand uses a clutch for the pto, otherwise I'm not real sure why they are on the same side as the hydro pedal.
