I made this board for slicing venison for jerky. One side is 1/4" and the other 3/8" thick cut. It actually finds more use than I would ever imagine, the wife best of all uses it for filleting fish and slicing chicken breast and such.

Nice looking board.

I used to cut jerky with a knife back when I still tried to make steaks and roasts out of venison. Now I either have sausage made, or cut it into jerky. The knife is too slow, so I bought a meat slicer and open it up the the thickness that I want. Then I run it through the slicer and get some thin looking steaks. I then cut those into strips for jerky with my sheetrock knife. I can change it out to a razor sharp blade in seconds.

Thank you. Maple finished with olive oil - my favored combination.

What type/brand of meat slicer do you use?

Prokop, Add some knives and you have a nice Kraut cutter. Multi purpose Board!:D

I don't know the brand, it's been a few years since I used it and it's buried in my storage area. I will tell you that I made sure to get stainless steel cutting wheels and tray. The motor is pretty basic, but the stand is very heavy. When you put it on the counter, it stays there. Mine is almost 20 years old.

Friends bought cheaper models, but they didn't have the power to handle bigger pieces of meat or the metal started to rust on them. If I was to buy another, I'd look at commercial for sure. I do believe you get what you pay for in something like this.

I would spend hours cutting jerky before buying this. After buying it, I was done with cutting and cleanup in an hour.

I've been making jerky for years and never heard of such a cutting board. At first I couldn't figure out how it worked, but Google was my friend.

My approach has always been to just take a really sharp knife and approximate a 3/8" cut. It was quick, but the sizes are never uniform.

I'm going to have to go out and make one of these!

I'm assuming an electric knife would make the process much quicker?

Had to read this when I saw the title. There's been complaints about the TPH on some of the "economy" model Kubota lifts that are jerky, but I couldn't imagine living with a jerky cutting board, neat idea.

I use sharp filleting knife, since it is narrow and the resistance is low. It flexes in the middle of the cut, but I can live with that. Electrical knife could orobably work faster, but I like sharp knifes and I am somewhat proud of my cutting and slicing abilities - just one of my little perks:D

Yeah, I really enjoy using a really sharp knife as well. I've got the Jet sharpening system (Tormek look-alike) and have easily invested over $1,000 just in sharpening systems. (I also do woodworking). Needless to say, I try to keep all of my tools razor sharp.

But, I just received a new Rapala electric fillet knife for my birthday, and I'm looking for excuses to use it. :)

Using a knife, the meat is easier to cut if it is a little bit frozen.
