If you use two attachments, ie a front end loader and a backhoe connected to your tractor at the same time, how would you feel about using a joystick to control each attachment?

That's pretty much how they're run. A joystick controls the loader (lift and curl functions) usually from the operator seat. Two joysticks control the backhoe, usually from a second seat facing rear.

I'd feel like I've been here before.

All of my attachments are already controlled by a joystick. And I can change attachments in 15 seconds without leaving the operator's seat (unless I have to hook up a powered implement, like a mower... then it takes another 30 seconds) :D.

Are you asking about a possible design that would use the SAME joystick or pair of joysticks ?
I ask because you said "...a joystick to control..."
Something that perhaps uses sets of solenoid operated valves, a ONE operator position arrangement ?
OK, I'm running with it.

Might be nice, kinda like playing a 5 manual organ with 3 pedal boards, which I've never had the opportunity to do either - but I have enough coordination to run a loader/hoe on a tractor with a 2 stage clutch.

I do use joysticks to control my attachments. If you are a true researcher you sure do not know how to ask questions. Actually my first read of your question had me thinking that you wanted me to use the FEL and the back hoe at the same time. But I actually do because I use the FEL to lift the front wheels off of the ground when I use the back hoe. If you are asking if I would like to use the same joystick to operate my FEL and back hoe the answer is no.
