Regarding water, there's a huge irrigation scheme going on here for the central areas of Tassie. Federal/State funds. I think I heard about another one started or planned around the south east coast region too. This is probably the reason for the dairy conversions you're hearing about as, what was only fit for sheep (and some meat cattle) grazing has been guaranteed more reliable water in those areas.
Cool climate wineries are popping up a lot too. Hmmmm... pinot noir... YUM. :licking:
There's a local sawmill in the area of Goshen, between St Helens and Pyengana, which may be the one you're after.
Coincidentally, it's called "The Goshen Sawmill".
