Dove season nears! Have a recipe?

Wondering what recipes abound through out the country?

What I have done..

Breast (Dove) with a slice of cheese and 1 slice of Jalapeno, wrapped in bacon. I have used the Jalapeno cheese, but find the fresh has better flavor. I generally... well always cook it on the grill. at around 180-200*. time varies..

Great finger food or side dish with rice, beans, cornbread whatever.

How do you other hunters prepare yours? please pass on your recipes!!

The group I hunt with numbers anywhere between 15-20. When we get done we put
all the birds together and do the assembly clean even filleting off the breast bone. That's when the dove nuggets start. All different batters. Corn meal, Beer batter and one that the man wont share recipe. Then fried in a friends large commercial fryer. Wow is it good!!! You wouldn't believe the people who crave this annual event. Normally women and children aren't so crazy about game. Not in this case. Good hunting!!!!!!

That is a good one. I have had that several times with rice and gravy. Like you said there are some good secret recipes, but the "cook" won't spill the beans sometimes..

Got plenty of room for ya!!! My buddy checked the field yesterday and the farmer was chopping corn for silage. And it was full of Dove. Took off work today just for it, tradition. We do ribeye sandwiches and eggs Chesapeake (with crabmeat) :licking:for breakfast then head on up and start shooting. Ahh that great feeling!!! Hunting season begins!!! To everyone else you know you can shoot Dove from the tractor seat as long as its not running:laughing::thumbsup::laughing:

Well Western, How'd you do? Not so good here killed 10 yesterday and none today. Oh well it is too hot and I don't think they are here yet. Hope you boys down there did good!!

I didn't do to good either. You beat me by 3. We had allot of weather rolling through, rained opening day, better Sunday.

The weather has changed with this cold front we just had, we are going from 98 to low 80's with 56* tonight, so maybe that will mix things up. If it doesn't, I will enjoy the change anyway..

Got to try my new shotgun though and boy is she sweet, wont use a pump again unless I need a paddle..

Birds seem bigger this year too..

Salad dressing.

I've never cooked dove, but I cook duck, chicken, etc. I'd imagine the trick would work just as well for Dove.

Brown the meat in bacon grease or shortening. Put it in a Dutch oven and half cover it with whatever salad dressing you like. I use Catalina French for chicken and Russian for duck and goose. Cook it long and low. If you like, add a little pepper and maybe some salt.

You might try a raspberry vinaigrette.

The other option is to make it into Thai Satay. Cut the breast into strips about 1/4" Thick. Marinate in peanut sauce for about 30 minutes or so. Thread the strips onto bamboo skewers and grill on high heat for a few minutes. The peanut sauce and bamboo skewers both should be availble at your local grocer in the asian section with the soy sauce.

I think I will try the Catalina French since I have used that on Shiskabobs,(SP)

The chicken Nugget style worked out good. I like quail better than dove, but with the fire ants we don't have many quail around anymore.
