I made this to go with the black beans and pork from the other day.

Some years ago a friend took us to a Cuban restaurant and I had something with roast pork that was really nice. So I got on the web and figured out a recipe. There are lots of them, all about the same. Easy to make.

Marinade

6 large garlic cloves, smashed in garlic press
2 tsp cumin
2 tsp ground green peppercorns
1 tbsp mexican oregano
1 cup orange juice from fresh oranges
1/4 cup lime juice from fresh limes
1/4 cup olive oil
salt

Put marinade and 5 lb pork roast in ziplock, put in refrigerator overnight turning a couple times.

Next day put marinade and pork roast in a dutch oven, adding water to get maybe 1" at the bottom.
Cook covered at 275 for 3 hours.
Then cook uncovered at 325 for 2-3 hours.
When done the roast will be falling apart tender and crispy on the outside.

I usually make it as a guest dinner knowing almost nobody has ever had Cuban roast pork!

Goes with black beans, roast potatoes, tacos, burritos, etc.
