If I engage the mid PTO at idle (1,250 rpm) with the MMM attachment on, the engine will stall. If I raise the rpm to 1,500 then the engine will shudder badly for a second or two, emit a cloud of black smoke but won't stall.

What are others with the GC2300 finding is the sweet spot in the rpm range for engaging the mid PTO with something that had as much rotating mass as a MMM deck?

I throttle down to idle, engage the PTO and immediately throttle up to WOT and mow, mow, mow

I just drop down a few hundred RPMs so that I am not running at WOT. I have done it so many times that I do it more by feel than by looking at the tach. After a while you can tell just by the sound where things are. If I had to guess I would probably say that I am around 1900 - 2000 when I engage the MMM. Any less there is a noticeable shudder of the engine. I think that you are suppposed to throttle down before engaging the MMM to reduce shock to the driveline but I haven't ever seen anything specific to what RPM to engage at.
