This is one of my few original creations. Unique and a special taste treat for someone who has never eaten persimmons before. We had some friends over for dinner and my persimmons were finally ripe enough to pick and I had to decide what to do with them. None of them had ever eaten persimmons before and they just helped them selves to the salad without asking what it was.
After remarking how delicious it was and then asking "what is it?", I explained that it was beet - persimmon salad. A couple of them said they were glad I didn't tell them what it was before they tried it because they had never eaten persimmons before and likely would not have tried it. It is an extremely easy recipe except that those from out of state will have to mail order the salad dressing.
Here is my recipe: You can double or triple it depending on the amount of servings that you want.
One can of pickled beets cut into pieces about the size of dice.
The same amount of persimmons cut into the same size. Use persimmons ripened to about the consistency of apples, not ones ripened to the consistency of ripe tomatoes.
One half teaspoon of ground cinnamon.
Enough Zea's Pepper Jelly Vinaigrette salad dressing to coat everything.
Mix well, chill and serve.
