Spring has sprung and the chickens are laying again (Yeah!) but Good Golly I've fallen in love with the duck eggs! They are HUGE and very YUMMY.

I am about to seriously dive in and order some prolific laying Campbell ducklings but I'm curious if the market is there.

I have a number of people interested in fresh eggs from our farm, so Chickens are a given, we will have plenty of those and I plan either to sell subscriptions or to a local farmer friendly market.

But can I sell the Duck Eggs? Will people think that is odd? Can I sell them at a higher price?

Anmyone got any answers. please shout them out.

I know what you mean about how the eggs taste. I've had geese and ducks for many years and we use the eggs in everything, very rich and much more flavor than chicken eggs. I had some Campbell ducks for a while but for some reason they didn't lay many eggs. I have a few White Peking hens that were given to me and they're laying pretty regular now. My geese should start laying soon.

People aren't very receptive to duck and goose eggs until they taste them. I've never seen any for sale. If you can give people a sample you probably won't have any problems selling them.

I haven't tried selling any, but do have my neighbors happy to take them when offered. In exchange the neighbor kids are great about taking care of my "flock" of critters ( Basset hounds, Walker Hound, Ducks, Chickens, Minature Pig, parrots, cat, and whatever else the missus rescues). It really is a fair exchange and the Ducks are real egg-laying machines. :thumbsup:

If you have an independent country baker close at hand...not one of these franchise bakers ...but a truly independent one, approach him and he will probably put in a standing order for duck eggs......they are far better for baking than chicken eggs.

When I was living home as a young adult my father had all kinds of poultry including ducks.He didn't like to waste anything so the duck eggs went for baking mostly(one duck egg/two chicken eggs) very rich but a little strong tasting.
I have the opposite problem now;I have about 120 ringneck pheasant hens and once my incubators are full I can't give the extra eggs away.Their eggs are about half the size of a large chicken egg.

I see them for sale occasionally on Craigslist and have seen them for sale in the local Co-op store (something like a Wholefoods). Not sure how well they sell. I have ducks but don't eat the eggs, by the time I find them who knows how long they have been sitting around and most seem to end up on the bottom of the pond.

Also I have seen Quail eggs for sale at Asian markets... maybe they are also more inclined to eat duck eggs if you have a local Asian population?

Hardboiled pheasant or even quail eggs are great for snacks, making egg salad out of, or putting in a pasta or potato salad. Anyone asks, just tell them it's a specialty egg and you can give them the recipe later. (After they've eaten and raved about how good it was.)

I remember having a goose egg for breakfast many times when growing up. All it took was one.
