Starting in this next couple weeks will be the pot of “Eternal Soup”, which will sit on the stove until sometime in March… every time some gets served, it gets brought back to a rolling boil for five minutes as more water and veggies are added, then turned off until next serving, where it is brought to a rolling boil for 5 minutes… lather/rinse/repeat. Primarily cabbage, onions, and mushrooms. Sometimes carrots and celery get added too. Garlic every time. Good winter peasant fare.Soup creeps.
I always have the intent of making a small pot but end up with an industrial size vat.
Sometimes I get tired of it but when it's done I miss it.
Soup does get better as it ages and the flavors meld.
