It may well be satin. And doing a room of it is not a bad idea, just not my bedroom or the main room. If I am forced to repaint, I would prefer it to be a smaller more manageable space. Because we are so close to the end, she wants to rush thru and get done. But it is this last 5-10% that everyone will see. Including us. And If I have to listen to disappointment about the shortcuts we took at this point, I will be angry and I will know that I could have prevented it.
The drywall crew did a very good job. As I have been vacuuming I have had a chance to see it up close and run my fingers over it.
But I’m still leaning toward eggshell for the big room.

Its satin for my ceilings and walls. Semi gloss enamel on wood trim. Never bought a gal. of flat paint in my lifetime....just like a shine better !

Get it all primed first which will give you time to choose !

A lot of wood is showing. If you intend to stain don't forget the cheater devices to keep paint off of the exposed beam and wood stain off of the paint.

Finish work is always slower than rough work. You are spot on to take your time here and get it right. She may feel you are close to done, but there is still a TON left to do to make a finished house. Drywall and paint are where you start to transition to the slow stuff, and like you said, it is the stuff you will see so you want it right.

My builder said when he's hanging sheetrock he's half done.

My opinion FWIW is finished drywall puts you at 2/3 of the way. That’s for your average house. The higher the level of trim and detail, the less far along you are. Lots of work left to trim and finish the house.

I mean, for my house.... paint was the last thing we did before moving in and living there permanently. So we didn't exactly rush it, but we made quick choices and got right to work on it, and got it done quickly. Then got our temp C of O and started moving in furniture the next week.

Trim can pretty easily be done with minimal mess (miter saw outside or in dedicated "temporary workshop" room) while you are living there. As can most every other finish detail work.
