Haven't posted anything new for a while...
A few years ago the neighbor gave me an old Brinkman charcoal smoker. I smoked a few things, but it takes a lot of watching as the temp tends to swing a lot between adding charcoal.
I saw references to converting them to electric. They used to sell a kit, but no longer.
So, I found a 1500W element with temp control and installed it. Target temp is 225. I could only get about 180 out of it when it was 30 outside.
Bought some lava rocks to make a heat mass in the bottom, and added a Harbor Freight welding blanket doubled up on the sides.
225 all day!
First try was two large chicken breasts. I marinated them overnight, then dry rubbed them. Pre-heated the smoker, and 2 hours later the internal temps were 165. Nice and juicy.
Cut one up in small chunks for southwest salads, and sliced the others for chicken sandwiches for 3 days. Man they were tasty.
Gonna try a small turkey next time I have a free afternoon.
