Haven't posted anything new for a while...

A few years ago the neighbor gave me an old Brinkman charcoal smoker. I smoked a few things, but it takes a lot of watching as the temp tends to swing a lot between adding charcoal.

I saw references to converting them to electric. They used to sell a kit, but no longer.

So, I found a 1500W element with temp control and installed it. Target temp is 225. I could only get about 180 out of it when it was 30 outside.

Bought some lava rocks to make a heat mass in the bottom, and added a Harbor Freight welding blanket doubled up on the sides.

225 all day!

First try was two large chicken breasts. I marinated them overnight, then dry rubbed them. Pre-heated the smoker, and 2 hours later the internal temps were 165. Nice and juicy.

Cut one up in small chunks for southwest salads, and sliced the others for chicken sandwiches for 3 days. Man they were tasty.

Gonna try a small turkey next time I have a free afternoon.

One pan chicken with veggies and lemon. Wife made this one. Pretty good. Can't remember the seasonings. No leftovers.

Very creative. Looks great. If you get yourself a little smoke basket you could add some smoke flavor to it.

I did another big batch of stir fry tonight. I forgot to take pics tonight but this is exactly the same thing from about a month ago or so.

Two weeks ago I tried smoking a meet loaf. It turned out ok but I was sure tired of meatloaf after eating that big thing all week. Froze about 1/4 of it.

Trying to fight inflation by not eating out and cooking up big batches of food that lasts all week. It works. Much less eating out and saves a ton of money.

You gentlemen can certainly cook; my wife thinks I do fine, but I don't have the experience I'm seeing here.

St. Patrick's Day was Friday, however, my wife is Catholic, so we went to a fish fry (delicious) and had our corned beef and cabbage Saturday.

Sliced up an onion on the bottom of the InstantPot, put in the trivet, laid the meat fat side up and put on the seasoning packet. Added 4 cups of water around the sides and put on pressure for 90 minutes.

Relieved steam manually, removed meat fat side down to a platter and covered with foil and towels to keep warm.

Removed 2 cups of liquid from the pot, added 8-9 cubed up red potatoes, a couple handfuls of little carrots, and a head of cabbage cut into 8 wedges.

Put the pressure back on for 5 minutes, waited till it was done, relieved pressure manually, dished it out, sliced the beast, and plated.
