Layered the veggies, seasonings, then added pats of butter .. topped with homemade beef stock(added a dash of muscadine wine) .. then the seasoned roasts on top with some stock poured over them ... Smoked approximately 2.5-3 hrs.
Finished product... Every bite whether veggie, stock or meat tastes similar to smoked ribeye.
