Just made eggplant parmesan, baked rigatoni with ricotta cheese, meatballs, hot and sweet sausage with onions and the sauce was from all the tomatoes I grew this season. Plus there is a full loaf of an olive oil Ciabatta bread just to fill you up.
And talk about a GREEN Christmas. It was almost 70 degrees in these southern Vermont mountains today!
And plan on taking the motorcycle out tomorrow too.
Fresh cut all the parsley, celery, rosemary, marjoram for the sauce and sage for the sausage to use in all those dishes. All the potted herbs are growing on my front porch still!
Oh man we are going to pay for this bad
