I didn't normally snack on nut bars, but about Thanksgiving I made the mistake of purchasing some Kind Bars. 4 boxes of 12. Before I managed to get 1 my wife and my son had gone through three boxes. So I hid one box and brought it with my wife and I to Mississippi and opened it after Christmas. I got less than half the box, maybe 4.
Now they don't look that complicated but I'm sure there is some recipe/cooking methods out there to make similar, but I'd like to add habanero powder.
I like habanero, my wife detests it, so I figure I might get to eat some.
So does anybody have any good recipes with cashews, almonds, cherries, dark chocolate?

LOL, I completely understand. When it comes to anything sweet I have to buy something my wife doesn't like or it won't last.

I'm interested in this thread too because I've always thought it would be easy to make a healthy/cheap bar but haven't tried it yet. Trying to eat better.

newbury, are not the "Kind" bars supposedly healthier for a person? I think I may have seen a commercial of that brand.

Never thought about it but...seems all it would take is a suitable binder and your choice of ingredients...I'm sure there are recipes on the net and youtube...

Mix together 1 cup each, cashews, cherries, almonds and dark melting chocolate. Add 1 teaspoon or more to taste of habanero powder. Put in saucepan. Cook on med-low until chocolate is melted. Stir all together until coated in chocolate. Spoon onto waxed paper. Cool in fridge for 10 minutes. Enjoy.

Of course, cherries and chocolate have sugar, so not really low carb. Maybe substitute some sugar free dark chocolate and dried strawberries. Strawberries are not so high in sugar. If you really want bar shape, mold them after they go on the paper, but before they cool.

I just skip the cooking part and eat the nuts like trail mix.

Slightly off topic but somewhat in line. My wife tried this today and it turned out amazing. Take a can of sweetened condensed milk and put in a crock pot for 8 hours, lay the can on it's side fully submerged in water. Do not open the can, put it in the water unopened and make sure the water completely covers the can.

Set crock pot on low and let it go for 8 hours. After 8 hours take the cans out and let them cool on the counter. Open them up and enjoy some very good caramel.

It works, I just had some and couldn't tell the diff. from store bought caramel. The slow cooking process caramelized the milk/sugar. Drizzle some of that on your healthy bars. : )
