Dethaw would be properly rendered as de-thaw. De-thaw then means proper thawing is a 2 step process. First you thaw then you repeat the process to make sure the action is complete.

That would be re-thaw.

If you don't use a hyphen in some words it gives the sentence a 'hole' different meaning.
example:
The table-saw my father had worked for over 40 years.
The table saw my father had worked for over 40 years.
Maybe tables can't 'sea' but that is not the point.
