You need to derate the output. For instance if its a 20 kw the single phase output will be about 14 KW. Its not done very often. Some generators can be rewired in the stator can, some can’t. Ive seen it done, but its not recommended. Hard on an alternator. Not the same as a transformer. Better 3 phase units have wiring in stator can that can be swapped around to get single phaseCheck with the manufacturer. I am not sure you need to do anything. If it is a 230V 3 Phase generator, you maybe able to just connect to two of the three wires to use for single phase power. This is what I would do coming off a 3 phase transformer.
