I often have to hookup by myself as well, even with a quick hitch, it can be troublesome. I made a few of these which serve two purposes, they easily allowed me to get them lined up, and/or I can move them to a corner for long term storage.

Cat 2 quick hitches do not have an adjustable top hooks....at least none of the five I looked at, none of them were adjustable.

The plastic one I posted, does have rounded edges. They also sell it in different sizes and colors...no way it would chaffee anything. It’s easy enough to cut to length, but I would recommend cutting it to length after it’s on.

I would also invest in a decent paper shredder. shred everything with your name, address and any account number on it. other than that, sounds like you are now setup to protect yourself.
